Akiva Chiko: The secret is that we don’t take shortcuts. Quality at Elchikos is a technological process. Take our meat: it undergoes the strictest multi-stage control. We use only premium selected cuts that are ground on-site immediately before cooking. There is no freezing and no questionable semi-finished products.
Guy Elikishvili: We also believe the soul of the product is in the bread. We don’t buy pre-made buns. We bake our signature burger buns and legendary Israeli Challah ourselves, daily, right on the premises. When you try our flagship Schnitzel in Challah, you experience the crunch of fresh bread and the tenderness of premium meat. It is a fusion of artisanal warmth and industrial precision.
III. Technology and the Strategic Launch in Georgia
— Why was Tbilisi chosen as the first point on your global map? And where do high-tech innovations come in?
Akiva Chiko: Georgia is an ideal launchpad. Tbilisi is currently a massive international hub at the crossroads of cultures. The statistics speak for themselves: Georgia is a top destination for Israelis, with an annual tourist flow of 400,000 to 500,000 people. This is a huge, loyal audience concentrated in one location.
Guy Elikishvili: Regarding technology, we are operating in 2026, and food must be "smart." We have built our own SaaS infrastructure—a powerful online platform that manages everything from the moment an order is placed in the app to real-time logistics and inventory analytics. We aren't just a restaurant; we are an IT company that knows how to cook perfectly.
